A Spanish Christmas
In Spain, Christmas is not one day – it is a season. It runs from late November all the way through to January 6 (the Día de los Reyes Magos), when children wake to shoes full of gifts and cities stage spectacular Three Kings parades.
The table is at the centre of all of it: families gather on Christmas Eve for long meals of roast lamb, fresh seafood and slow-cooked dishes. Turrón – the almond and honey nougat that appears in every Spanish home in December – is passed around after dinner with something sweet.

Even in these more secular times, many Spaniards attend midnight mass—Misa del Gallo, or Rooster’s Mass—on Christmas Eve (Nochebuena). This is also the occasion when families gather for substantial feasts featuring roast lamb or fresh seafood.
We take immense pride in our culinary heritage, and our Christmas specials reflect this lifelong passion. Classic festive highlights include turrón—a traditional nougat crafted with almonds and honey—alongside pavo trufado de Navidad (turkey stuffed with truffles), cochinillo asado (roast suckling pig), and, of course, bacalao a la Vizcaína, which features salted cod prepared in a rich sauce of red peppers, tomatoes, and onions.
